But I must say I thoroughly enjoyed reading, &quot;The Boys are Back in Town.&quot; As an artist myself, I could identify with the struggles chefs face when they want to express their creativity only to be fettered by what the market dictates. The sphere of fine dining chefs is so far from my sphere, it was a bit surprising how much I got &quot;sucked into&quot; this article.  I always knew great chefs are truly great artists, but I gained an even greater respect for what they do because of your piece. Perhaps I should tip my hat to these artists a little more often, sacrifice a few &quot;manufactured&quot; eats here and there, and check these venues out. But then I guess it depends on the fireplace/wood oven itself and maybe particulate pollution doesn&#039;t matter so much in the country (and with vog spewing out nearby!). To be honest, I don&#039;t know the carbon footprint in delivering natural gas for heat... But anyways, I suspect you&#039;re generally right.]]></description>

Wood fires are in fact the absolutely greenest option, with the possible exception of passive solar, which doesn&#039;t do too well on cold upcountry days and nights.  Wood fires are low-impact, 100% renewable, sustainable, and nearly carbon-neutral (depending on how the wood was cut and carried).  Non-carbon emissions are negligible, and believe me, our island has enough weed trees that we could never make a dent in it, even if we did all our heating and cooking with wood.]]></description>
